I think you overestimate the money companies are willing to spend on memory and CPU for white line appliances. I actually have friends who have worked in R&D in the industry, cheap bastards wouldn’t splurge for an AmpOp if a BJT could do the job. If something required brains, a cheap small SoC was the way to go, with all its 64-256KB of memory.
A lot of those are running either minix, BSD, or some other ultralightweight OS. and those are definitely not Linux. Not even close.

I got my family to switch to Signal a while ago after a high profile data harvesting scandal with WhatsApp. Some were looking at telegram and I showed them how that had dogremoved security by just finding another high profile case.
People like to be able to send documents, bank numbers, etc. with ease. Remind them that’s not really possible with SMS or WhatsApp or whatever. (Technically Signal still is centralized and is vulnerable to shenanigans, but the fact that it’s open source and truly E2EE mitigate that. And has the least friction of all the options.)

Is the overhead because of containers or is it because you’re running something that is meant to run on Linux and is using a conversion layer like MinGW ?
Containers don’t really slow down apps significantly. It’s not a VM, it’s still a native app running in your kernel, just on a separate memory space and restricted access to hardware.
