I don’t understand why people need so much processing power in a phone?

If you really need mobile processing power and can tolerate a larger device, even a cheap, old, removedty, crusty, used laptop would likely offer a better experience.

There are always exceptions to the rule, but the former usually turns into the latter given enough time.
